Ingredients: - 1 and half cup pearl couscous - 1 red capsicum, diced - 1 green capsicum, diced - 1 yellow capsicum, diced - 1/2 red onion (or 1 small Spanish onion), finely diced - 1 cup baby pickled cucumbers, diced - 2 cucumber, diced or handfuls of baby cucumbers - Mixed cherry tomatoes - Fresh basil leaves for garnish For the Vinaigrette: - 1/4 cup olive oil - 2 tbsp balsamic vinegar - Juice of 1 lemon - 1 tsp salt (adjust to taste) Instructions: 1. Pat Heard on Instagram: "This salad doesn’t disappoint 🙌🏻 and lots of healthy fats and protein too 😊 I opted to follow the recipe EXACTLY (weird because I literally never use recipes haha!) so it calls for chopped iceberg lettuce, sliced and diced salami, chickpeas, grated mozzarella cheese and red onion. I think you could play with all that to taste tho!! In the dressing- olive oil, red wine vinegar, Dijon mustard, salt and pepper, and Parmesan cheese!!
