Oeufs à la Neige - literally 'eggs in the snow' or île flottante (floating island) is meringue floating in crème anglaise (a vanilla custard). Spun caramelized sugar virtually hovers seductively on top. A light fluffy, oh so French dessert - c'est tres delicieux!

Ingredients: For the Dough: 100g Cold Butter 200g Wheat Flour 1 tbsp Sour Cream 1 Egg 1 tbsp Sugar 1/2 tsp Baking Powder A pinch of Salt For the Filling: 50g Butter 50g Sugar 5 Pears Optional: Cinnamon Instructions: Create shortbread dough by mixing cold butter with flour, then add sour cream, egg, sugar, baking powder, and salt. Chill 30 mins. Peel, core, and quarter pears. Caramelize in butter and sugar, cool. Cover with dough, bake at 170°C (338°F) for 35 mins. Invert onto a plate and serve warm, ideally with ice cream.
