Let rest 1hr, do a stretch and fold and let rest another 6-8hrs or until dough is puffy, nearly doubled in size and jiggles when you gently shake the bowl. Line a 9x13 pan with parchment paper. Pour about 1/8 cup of olive oil into the pan and spread over parchment paper. Dump focaccia dough into the pan, then quickly flip the dough over with oiled hands so both sides of the dough are coated with olive oil. Let rise for 1-2HRS or until puffy. Preheat oven to 450. right before baking add some more olive oil, a sprinkling of hard pretzel salt, or any coarse salt you have on hand. Dimple dough all over by poking your fingers through the dough all the way to the bottom of the pan. If your dough is fermented correctly you should see several bubbles forming. Immediately transfer to your hot oven. Bake 25-30 min or until golden brown and center temperature is 195. Remove from pan right away and cool on a wire rack to prevent bottom crust from getting soggy.
