Boil and blanch green beans (8ish mins in salted water boiling and 1 minute in a ice bath) Drain them but don’t dry them Put them in a big bowl and toss with olive oil immediately and then add half the grated skin of a lemon, a 1/2 tsp of lemon juice, a clove of garlic, and generously salt them. Crumple up parchment paper and stick in the brown paper bag to keep it from leaking and serve them in the bag. I’m sure they taste the same from a bowl but we’re all about an authentic experience here and that’s how they serve them at the restaurant!!!"
