Beef & Tomato Macaroni Soup
Cook the Beef: In a large pot or Dutch oven, brown the ground beef over medium heat. Add diced onion and garlic, cooking until softened. Drain excess fat if needed. Simmer the Soup: Stir in beef broth, diced tomatoes, tomato sauce, basil, oregano, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes. Add Pasta: Stir in the elbow macaroni. Simmer for 8-10 minutes, or until pasta is tender. Serve: Ladle soup into bowls and garnish with fresh parsley and grated Parmesan if desired.
Cowboy Soup
In a large pot, brown the ground beef with the chopped onion and garlic, draining the excess fat. Add the kidney beans, black beans, corn, diced tomatoes, tomato paste, beef broth, and spices. Bring the soup to a simmer, cover, and cook for 20-30 minutes, stirring occasionally. Serve hot, topped with shredded cheese and cilantro if desired.
