First we're going to roughly chop four Serrano peppers. 5 roma tomatoes and half a white onion. To make it less spicy you can substitute the Serrano peppers for regular jalapenos. In a medium sauce pan heat up a generous amount of your preferred cooking oil over medium heat. Then add in the chopped vegetables. Fry for about five to seven minutes or until they're lightly withered. I also added two jalapenos and three garlic cloves. After a 10 minutes, remove it from the burner and cover for 10 more minutes. Then transfer everything to the blender including 1/2 a cup of water that I used to get the remainder of the residue from the pan. Season with one to two tablespoons of chicken bouillon and 1 teaspoon of Mexican oregano. Place it on the blender and give it a couple good pulses or until it reaches your desired consistency. Peel and dice 2-3 large Yukon gold potatoes or a potato of your choice into half inch pieces like these. In a large sauce pan, heat up a generous amount of your preferred oil. Add in the potatoes and lightly fry them for about 5 to 7 minutes. Make sure to move them around often so they cook evenly. Then add in the sauce from the blender. Mix it in with the potatoes. At this point you can also taste it to see if it needs additional salt or seasoning. Simmer over medium heat for an additional 10 to 12 more minutes or until the potatoes are nice and tender. At this point you can enjoy it like this but I'm going to top it off with queso Oaxaca or with your favorite melting cheese of your choice. Mix in the cheese and cover for 10 minutes or until the cheese is nice and melted. These papitas taste amazing on a fresh homemade flour tortilla. Or you can enjoy it with your favorite sides like refried beans and fresh homemade corn or flour tortillas. With the 4 serrano peppers that we used, it did turn out a little bit spicy.
