Host: Varun Inamdar... | By Get Curried | Being a movie buff myself I thought of showing you a recipe today which is a gift from superstar Sanjay Dutt to a restaurant called Noor Mohammadi here in Mumbai. Well the original recipe remains a close guarded secret for many years. But this one is the closest adaptation to the recipe. So here is to all the Sanju Baba fans across the globe Chicken Sanju Baba. Chicken Sanju Baba is a very mildly spiced chicken gravy. It doesn't use a lot of powdered spices well a few whole spices but let's first begin with heating a combination of oil. This recipe uses a higher quantity of oil and ghee compare to the other gravies that we see but that's a completely personal choice. While the ghee is heating up, let's chop few red onions. Cumin seeds. I'll add in black cardamom, whole red chillies, a few bay leaves, add in the chopped onions. I'll add in some salt. While the red onions are sweating, I'll also chop a spring onion this time with the white bulk and the leaves. Some ginger. We need to retain a few juliennes, the spring onions and julienne ginger. After 30, 40 seconds of stirring this, time to add in pieces of chicken. I have used leg and thigh of chicken, washed it nicely and given it a few slits so that the masalas seeds straight in. Along with this I'll add in some coriander powder. Followed by strands of saffron. Give this a mix. Two more critical ingredients. One is beaten curds and the second ingredient is almond paste. All I have done is blanch the almonds, peel them and I have ground them into a fine paste using some water. Let's add in some salt and along with this some chopped tomatoes. A final mix. After giving this chicken a good mix. We need to cover this and cook it without adding water for 30 minutes on low flame. Make sure you do not pressure cook this chicken otherwise it just changes the texture of the chicken. Now if you notice the gravy which was earlier looking white in colour has got this nice beautiful tinge of chilli oil. And that is thanks to the chillies that we had added earlier. The chicken has released from its bone which is the perfect sign of Dun Chicken. Time to add in final few ingredients. The remaining ginger which will give it that fresh bite of ginger. A little bit of lemon juice. We need to turn the flame off immediately after adding the lemon. And finally freshly chopped coriander leaves. A final mix and this straight goes on the dinner table. With this chicken Sanju Baba is ready.
