This healthy, easy recipe has a cake-like texture, making it perfect for both breakfast and dessert. 😍✨ 📌 **Serves:** 2 adults or 1 adult + 2 kids ✨ **Ingredients:** 🥣 1 cup (80g) rolled oats 🥚 2 eggs 🥄 1/4 cup (4 tbsp) vanilla yogurt (I used Alpro for a dairy-free option) ⚖️ 1 tsp baking powder 🌿 1 tsp vanilla extract 🍇 3.5 oz (100g) blueberries 🔥 **Method:** 1️⃣ Preheat oven to **400°F (200°C) or 360°F (180°C fan)**. EMMA BARDWELL | Registered Nutritionist on Instagram: "Pancakes with a difference…(these are great for meal prep by the way). 📌 Make sure you save this for later 👋 Follow me @emma.bardwell for high protein, fibre and plant recipes Here’s how to make: Set your oven to 180 degrees / 350 F 1 banana 250ml milk of choice 75g cottage cheese 60g oats 15g flax seeds 15g chia seeds 1/2 tsp cinnamon 1 tbsp maple syrup Toppings: 80g raspberries 80g blueberries 50g dark chocolate chips Blend everything apart from the toppings in a high speed blender (I used @nutribulletuk) then pour into 3 oven proof trays. Scatter over the toppings. Bake in the oven for 30-35mins. Serve with 150g 0% Greek yoghurt and an extra dusting of cinnamon. Also great with a drizzle of peanut butter. Nutrition stats
