INGREDIENTS:
500 grams unbleached bread flour (mix of unbleached bread flour and whole white wheat flour)
100 grams active sourdough starter
375 grams lukewarm water
10 grams sea salt
1/2 cup walnuts
3/4 cup dried cranberries

Combine & mixing ingredients – Mixing the water, active starter, flour, and salt. Cover and rest for 30 minutes.
Complete 4 stretches and folds (S&Fs) with 30-minute intervals in between.
Bulk fermentation – The dough will rise about 30-50%.
Pre-shape, rest 15 minutes & shape into rounds, place into greased 9x5-inch loaf pans.
Cold proof dough – Cover & refrigerate 12-36-hours.
Bake @ 475 degrees F another metal loaf pan loaf for 30 minutes. Remove the loaf pan cover, lower temp to 450 degrees F and bake for 20 minutes. (Internal temp should be around 200 degrees)
