It's as simple as a half a gallon of whole milk and five tablespoons of lemon juice. You want to bring your milk to a boil. Watch for the little bubbles around the edges of the pot. You'll know it's happening and when you got foam covering the surface, your milk is coming to a boil. You want to add five tablespoons of fresh lemon juice and stir constantly for 2 minutes. You can see it separating already. After two minutes of stirring, cut the heat off, cover and let it sit for 10 minutes. Look at this. Those are curds and that's weigh. Now, we separate the curds and the whey. The setup here is a glass bowl, a mesh strainer, and cheese cloth. Now, we want to rinse this with water and don't throw out the way. You can use it in other recipes especially baked beans. Now that it's rinsed, we're going to wring this cheese cloth out and get out all the moisture. Next, it goes in the food processor. Now, I add a couple tablespoons of butter, salt to taste, and take it for a spin. If it gets too stiff, add a little bit of the whey that you separated out of the curds.
