Frying them in cream makes them so so so good, and I use different topping combos sometimes too 😏 recipe below‼️ Ingredients (for 1 serving): -nearly 1/4 cup heavy cream -1 tsp chili crisp -2 eggs -salt & pepper -fresh scallions, sliced Directions: -Heat a small nonstick pan over medium-high then add in the heavy cream. Spoon in the chili crisp then crack in the eggs. -Close a lid over the pan and allow the eggs to fry until over easy, about 4 minutes. -Remove the lid and season eggs with salt & pepper. (Serves 2-3) 3 medium tomatoes (cut into chunks) 2 garlic cloves (sliced) 1 shallot (sliced) - or 1/4 brown onion or 2 spring onion whites Oil (2 tbsp + 1 tbsp) 4 large eggs (whisked) 1 tbsp sugar 1 tsp salt 1/4 tsp white pepper In a heated wok/pan add 2 tbsp oil and soft scramble the eggs until just cooked and slightly runny.
