Do you see how thick this turkey is? That is not lunch meat lunch turkey. That is like Thanksgiving turkey and then I had an idea. Open faced turkey sandwiches covered in gravy with mashed potatoes and corn. That's what's for dinner. I got these giant rolls at Sam's Club and I split the bag with Emily so they could enjoy giant rolls too and I'm going to split them in half and make two sandwiches tonight. 2 rolls. That's it. My kids are going to eat theirs cold because that's what they prefer but me and my husband are going to have ours hot. And the bowl here is just to heat everything through in the oven I don't really care if it gets crispy I don't really care if it's like toasted if you want to do that that's fine I'm not really that picky this is just a great way to use up either really wonky leftover lunch meat or leftover turkey from Thanksgiving when my husband and I were younger we would get turkey breast when they were on sale and we would have Thanksgiving in July because it was always on sale in July and we would do like a mini Thanksgiving dinner and then with our left we would do open face turkey sandwiches that's what led me to this idea today and I haven't done Thanksgiving in July in a very long time because it's hot here and I'm busier than I was when I was 20 our turkey sandwiches are made I'm just going to pop them in the oven just to heat through and while those are heating up I'll make my kids their sandwiches which is going to just be literally turkey and bread do you want cheese on yours turkey and American cheese I have one child downstairs playing a chase game with Matthew I have one child laying under the kitchen table having a hard moment. It's fine. We'll get through it and because it's a low effort kind of night and we spent as long as possible at the park tonight. I'm not making mashed potatoes for the side from scratch. I just got them at Sam's Club. It's fine. You can use premade sides if you need to. We would rather play at the park than eat homemade mashed potatoes tonight. Does everybody else just make their sandwiches right on the countertop because I can't be bothered and while my sandwich is warm through, I'm going to make some poultry gravy. I got this. At Sam's. I'm literally just trying to make the fastest dinner possible because we got home from the park at 530 and I just want to eat dinner. I just want to be done for today and sadly, I still have to prep tomorrow night's dinner tonight because I have a hair appointment tomorrow morning. I'm living the life. I'm living the dream but really, I am living the dream because there was a time not too long ago that I dreamed to be able to afford getting my hair done and now, I get to get extensions in my hair just for funzies to see if I like it. So, Riel, check Jessica you are in fact living the dream but it turns out the dream just doesn't feel the way you think it's going to feel and nothing feels the way you want it to feel even when you've arrived there does that make sense I think that's the whole the grass isn't always greener but I ain't complaining I'm just tired I'm just doing my best okay with everything while kids cry in the background as per usual my children will only eat mashed potatoes if there's also corn I'm not sure why but whatever gets them to eat it realistically, I believe my potatoes are nearly done if not all the way done. We're going to give em a stir. We don't want cold spots in our potatoes. That's disgusting. Tripping over shoes in the kitchen is a requirement. My corn is mostly done. My butter was frozen so it's taking a while to melt in my corn but it'll be fine. It'll be fine. Everything's fine. Tough dressing. It's just dinner and it's literally turkey sandwiches. Premade mashed potatoes and corn with gravy from a packet like none of this is serious. It's a random week night. My sandwich bread is crispy. My turkey's looking warm. Let's plate up one and then we'll get the sides and everything together in a minute and by one, I mean two because it's one roll split in half. Don't judge me. My mashed potatoes are hot and that's dinner. There you have it. Open-faced turkey sandwiches with rolls and pre-made mashed potatoes and corn and I know what you're thinking. Is it even good? Let's give it a taste. I truly hope that this idea is good because this could be a great leftovers after Thanksgiving or if your Walmart shopper decides that your turkey needs to be extra extra thick This taste like Thanksgiving in the best way but of course it's good.
