Method 	1.	Mix maida, sugar, baking powder, baking soda, and salt in a bowl. Add ghee and crumble it into the dry ingredients. Add curd and water as needed to form a tight dough. Let it rest for 30 minutes. 	2.	In another bowl, mix the grated cheese, paneer, green chilli, and coriander. Season with salt and pepper. 	3.	Divide the dough into equal portions. Flatten each ball, add a small amount of cheese filling in the center, and seal. Roll the filled dough into Mini kulchas with kalonji. 	4.Heat a non-stick pan, brush with ghee, and cook the kulcha on medium heat until golden on both sides. 	5. Ingredients: - 1 large onion - 2 large ripe tomatoes - 4 to 5 spicy chilies (optional) - 3 eggs - @ndcmuscat olive oil - liquid cheese - salt & pepper - 1 tsp cumin powder - 1 tsp coriander powder - 1 tsp paprika - 1 tbsp tomato puree - start by chopping the veggies. Saute the onion in a drizzle of olive oil. - once the onion starts to brown add the tomatoes. Season with salt. Pepper. Cumin. Coriander. Paprika. Tomato puree and any spices that you prefer. - keep cooking the tomatoes on medium low till dissolved. - switch off the heat then crack the eggs in the mixture. Mix it thoroughly and add a splash of water. - turn the heat back on low and spread the cheese on top. - cover and let it cook for 3-5 minutes. - garnish. Serve with bread and enjoy. @chefjjskitchen
