This is a twist on a classic dish from the world renowned Dookey Chase restaurant, Gumbo Z’Herbes by Chef Leah Chase💚 Ingredients: Roux: 1 cup oil 1 1/4 cup of all-purpose flour Mirepoix/ the Holy Trinity: 2-3 stalks celery, diced 2 onions, diced 1 green bell pepper, diced 1/4 cup green onion, finely chopped 1/4 cup fresh parsley, finely chopped 2 teaspoons fresh garlic, minced 1 cup frozen okra or cooked (optional, since I forgot to add it lmao) Gumbo Meat & Seafood: 1-2 pounds andouille sausage, sliced into 1/4” thick rounds 1.5 pounds of smoked turkey meat 1-2 pounds shrimp, peeled and deveined (tails can be removed if you prefer) - save the shells for shrimp/seafood stock. *OPTIONAL* 8-10 cups chicken or vegetable broth 2 pounds of collard greens, cleaned, trimmed and cut Seasonings: 3.5-4 tbsp Creole seasoning 2 tbsp garlic powder 2 tbsp onion powder 2 tbsp smoked paprika 1 tbsp black pepper 1/4 cup brown sugar (trust me) 2 bay leaves OPTIONAL: Shrimp, okra, gumbo filé powder Serve with hot water cornbread and hot sauce | Candace Barclay
