I'm going to do two small little cookie scoops right in the center of our beautiful flour tortillas for this delicious and easy little copycat lunch. You can also feel free to do a black bean or you can also skip the beans but beans are great protein and I love as a vegetarian, love using beans in my recipes. Alright, two scoops perfect. We're next going in. I have some par-cooked ground beef and I'm just going to grab some of our ground beef and just place that right in the center on top of our refried beans. You can also do a soy rizzo, a chorizo impossible meat. Kinda the possibilities are in like ground turkey or ground chicken, a shredded chicken. Just making sure that those are all evenly distributed onto our flour tortillas. Perfect. Of course, we cannot forget our Mexican style shredded cheese and I'm going to use only a portion of bag because we want to save a sum. So, I'm just going in with a small sprinkle right on top. For my meat, I did season that with some paprika, some garlic powder, and some ground cumin. You can kind of season your ground beef for your meat however you'd like and now, I'm going to go in and I'm going to roll it. So, we want to tuck it in like a little baby just like so and we're going right back over and I'm going to flip 'em so that the seam side is down. Alright, now that we have everything nicely rolled. I'm going to bring in my beautiful thirteen by nine and we are going to start by placing our little roll ups into our thirteen by nine just like so. Just going right on in. Just kind of making sure everything's nice and tucked in. It's alright if some of the ingredients fall out we can just pop them right on top. Oh beautiful. And I just use kind of the mid size flour tortillas. You could also do a corn or a white corn Just making sure we got everything in there beautifully. Alright and to top our beautiful little roll ups, I have our red enchilada sauce. I'm going to go pretty heavy with that enchilada sauce just to make sure that they evenly coat our little roll ups here. You could also do a green enchilada sauce, you can make your own enchilada sauce. You can do a nacho cheese sauce. The kind of possibilities are endless but I love saucy, saucy Mexican entree. So, I'm going to use that entire can right on top Just like so. And then we want to come back with the remainder of our Mexican shredded cheese. I'm going to go over the top just like so so we can get that nice beautiful bubbly brown crust. Alright, perfect. Make sure it's evenly distributed before we place this into our oven for about twenty, 25 minutes at 350. Alright. Our beautiful enchiladas are out of the oven. Our cheese is beautifully melted but we are not done yet. I'm going to come in with some shredded lettuce. I'm just going to go lightly right down the sun just to add a little bit of freshness, little green. Perfect. So, I use about half that bag and then, my favorite part, I'm going to grab a little ice cream scooper and then, I'm coming in with some hot pico the gallo. I love a good pico. Look at all this fresh onions, cilantro. Oh my gosh, if you could smell this right now. I'm just going to kind of put a little on each one so everyone can have a bit to enjoy. Perfect and then, what is Mexican food without sour cream? I'm just going to try and drizzle our sour cream all over. Ooh, look at how delicious that looks. I am ready to plate this up. I'm going to grab a spatula in my plate. I think we'll go right for this front one. Ooh, you hear the crunch of that tortilla too. I want to make sure we get nice pico and that lettuce. Let's see. Perfect. Oh. Oh my goodness. Look at how delicious that looks. Taco Bell Who, am I right? Alright, perfect. Let's give this a big honking bite. Wanna get that pico, the lettuce, our beans, our enchilada sauce. Oh my gosh. Really really good. You gotta try it.

We're going to go ahead and grab some chopped onion and we're going to return it back and brown the meat and strain it out. So, once I got it all brown and strained out, we're going to go ahead and we're going to grab a couple ounces of cream cheese and get that in there. We're going to go with two packets of taco seasoning in there and now, we're going to bring it back to the burner and we're going to get that mixed in. Restaurant-style salsa and we're going to go about half a cup to a cup of whatever you want. Corn that's fully drained. One can. We're going to go with one cup of black beans fully drained. Get those in there. Diced green chilies. Get that in there. We're going to return this back to the burner. Get this all mixed in and warmed up. Alright. Grab yourself a nine by thirteen or any oven saved tray. Alright and we're going to take our mixture once it's already or all heat it through and just get it down in there in your dish. Like so. Look at that. Smells great doesn't it? Yeah. Oh my gosh. Now we're going to grab some four this is a four cheese Mexican. But we're going to take a few cups worth. We're going to layer this top pretty heavy here. Get that all on there. We're going to pre heat the oven out at 375 bake. Alright grab your top some Fritos. You know you gotta have the Fritos. We're going to just layer the Fritos on the top side. Like so. Kinda blend them in with the cheese a little bit. Bites, sprinkle on top side of the Fritos. Oven's ready. Everything's fast. You gotta work fast. We're going to get it in here for about 10 minutes or so. All oven times are varied just until the cheese is melted because everything's already cooked. Okay. Ain't been long because you're only melting cheese a little bit. Right? We got it right there. Everything again goes fast. Now everything's all about garnished. Chopped fresh green onion, iceberg lettuce. Don't forget about the cherry tomatoes. Brown's black olives. And would you look at that right there? Now that's easy. A walking taco. Hm. My favorite is tacos. And oh yeah. Look at that right there. Ho ho ho. Yes. A sour cream some hot sauce on top if you choose to but we got those green bon appetit. Wow. With all that I showed you I put in there. Oh there's some flavor. And no it's not hot at all. It's got a lot. Oh wow. Oh I don't think that's going to last. I'm going to tear this up. Y'all need to get out there and make this.
