Made with fresh spinach, paneer, and cream cheese, it’s a healthy and delicious twist on a classic dish. Ingredients: • 2 medium zucchinis • 2 large tomatoes • 1 cup spinach • ½ cup paneer (crumbled) • 2 tbsp cream cheese • Salt & black pepper (to taste) • 1 tsp olive oil • ½ tsp red chili powder • ½ tsp oregano • ½ tsp mixed herbs • ¼ cup grated cheese (mozzarella or cheddar) Instructions: 1. Prepare the Tomato Sauce: • Boil the tomatoes until the peel starts to separate. Remove the peel and grind them into a puree. 2. Prepare the Spinach Filling: • Blanch the spinach with a pinch of salt. Once softened, drain and mix with paneer, cream cheese, salt, and black pepper. 3. Prepare the Zucchini Strips: • Using a peeler, slice the zucchinis into thin strips. 4. Assemble the Ravioli: • Lay two zucchini strips horizontally and two vertically, forming a cross. • Place a spoonful of the spinach-paneer filling in the center. • Fold the strips over to wrap the filling, creating a ravioli-like pocket. 5. Cook the Ravioli: • Heat olive oil in a pan and add the tomato puree. • Season with salt, red chili powder, oregano, and mixed herbs. • Place the zucchini ravioli in the pan and cook for 2-3 minutes. • Sprinkle grated cheese on top and cover until the cheese melts. 6.
