My First Meals | Grace Mortimer on Instagram: "Cheesy Sausage Pinwheels . . . INGREDIENTS: 1 sheet of puff pastry 6 sausages 2 tbsp wholegrain mustard 1 onion 1 handful of grated cheddar . METHOD: Turn the oven to 180 c fan. Roughly slice the onion and add it to a frying pan on a medium heat with a good drizzle of oil or butter and fry until soft and golden. Lay the puff pastry out flat and cover with a thin layer of the mustard. Squeeze the sausages out of their skins and spread the sausage mixture evenly on top of the mustard. Spread the onion across the top and finally sprinkle over the grated cheddar. Roll the pastry into one long sausage (not tightly or you’ll have raw pastry) and slice into even disks. I can’t help myself but to make changes, so this morphed into a Christmas cake, Dundee cake hybrid. But the orange olive oil addition was brilliant and made for the lightest most moist cake - definitely worth a try. The key is to never overcrowd the roasting tray and to make sure the veg are sliced quite thin on all the right places so they can get nice and crispy in all the right places.
