Well, I did it and it was SO good! It's ridiculously easy to make and because it uses all tinned and store cupboard ingredients, it's as cheap as chips! The secret ingredient is beef gravy granules. They make it thick and hearty and you probably already know this, but most beef gravy brands are vegetarian! It's currently 20% off and the link to pre-order is in my profile I've written up the recipe for this below and I would love to know if you're going to give it a try, A x Feeds 4-6 Oil for frying 1 red onion finely chopped 2 cloves garlic finely chopped 1 tbsp sun dried tomato paste 1 tsp chilli powder 1 tsp ground cumin 2 tsp smoked paprika 1 tbsp honey 2 x 400g green lentils drained 400g tin of baby tomatoes 400g tin of kidney beans drained 25g Beef gravy granules (veggie) mixed with 400ml boiling water Salt and ground black pepper Heat a drizzle of oil in a large, non-stick pan. Add the onion and fry on a medium heat for 5 minutes, stirring regularly. Add the chopped garlic and fry for 1 minute. Stir in the sun dried tomato paste, spices and honey. Give it a stir and fry for a minute or two. Add the drained lentils, baby tomatoes and beef gravy. Use the back of a wooden spoon to pop the tomatoes. Stir in the kidney beans and season with salt and pepper Simmer on a medium heat for 15 minutes, stirring regularly. You'll need two bags of Santa Fe blend, a bag of Spanish rice and a packet of taco seasoning. Starting off with the Santa Fe blend, this is a frozen blend of corn, beans, peppers, and onions and it's a great value rather than buying the individual ingredients. We're going to microwave it first. I'm going to steam it in the microwave for seven minutes per the package instructions because the beans in the bag are not fully right off the bat. From here it's barely dump and go starting in a large pot over medium high heat. I added in a tablespoon of oil and to this I added my taco seasoning. This is called blooming your seasoning and it's where you cook it in hot oil to intensify chili flavors and you generally get a better bang for your buck out of your seasoning if you do it this way. Then I added in both bags of my Santa Fe blend. My packet of Spanish rice and I allowed this to saute for a couple of minutes before I added in four cups of water. Of course if you choose you can use broth or bouillon here in place of the water but you guys already know that when I say it's a $5 recipe I literally mean it's a $5 recipe. Allow this mixture to come to a boil. Give it a quick stir to make sure none of the rice is sticking to the bottom of the pot and then you're going to cover with a lid. Reduce your heat to low and allow it to simmer for about 20 minutes. After 20 minutes your taco soup is ready to serve. Of course if you're not dairy free you can top this with some sour cream or some cheese. With the taco seasoning and the Spanish rice. This dish has plenty of seasonings and flavor without any extra cost or additives and it was really good guys. I even burned the **** out of my tongue trying it for you all so it was totally worth it.

1 tsp calabrian chili (optional) 6 garlic cloves, minced (to taste) 1 tbsp fresh thyme, chopped 1 tbsp fresh rosemary, chopped 3 tbsp tomato paste 1/2 cup dry white wine (optional) 4 cups low-sodium chicken broth 2 (15 oz) cans cannellini or Great Northern beans, drained and rinsed Parmesan rind (optional) Bay leaf 1/2 cup sun-dried tomatoes (julienned, packed in oil) Freshly grated parmesan (about 1 cup) 1/2 cup half and half or cream 2-3 cups fresh spinach or kale Lemon juice, to garnish Crusty bread to dip 1. In a large pot, heat about 1 tbsp of sun-dried tomato oil over medium heat. Sauté the diced onion, celery, and carrot with salt, pepper, Italian seasoning, and calabrian chili for a few minutes. 2. Clear a center in the pot and add your preferred protein. Allow a crust to form, then flip and break up with a wooden spoon. Cook through and combine with the veggies. 3. Add the thyme, rosemary, and minced garlic. Stir and cook for another minute. 4. Clear a center in the pot again and add the tomato paste. Let it cook in the pan for 1-2 minutes before stirring with the rest of the ingredients. Stir and cook for another minute or two. 5. Deglaze with white wine, scraping up any brown bits on the bottom. Let it simmer for 1-2 minutes. 6. Pour in the beans and chicken broth, and season with salt and pepper to taste. Bring to a boil, then reduce heat to low. 7. Add in the parmesan rind and bay leaf. Cover and simmer for 20 minutes. 8. After 20 minutes, discard the bay leaf and parmesan rind (if you can find it) and finish with the sun-dried tomatoes, parmesan cheese, half-and-half, and spinach. Stir until the spinach is wilted. 9. Serve and top with more parmesan, lemon juice, and black pepper.
