Ingredients: 8 oz cream cheese 2 cups chicken (shredded) 1 cup shredded cheddar 10 oz rotel (drained) 3 tablespoons sour cream Handful of green onions Salt/Pepper/Garlic Powder 5 large burrito sized spinach tortillas Garnishes: Cheddar cheese star Fresh rosemary grape tomatoes Directions: 1. Add cream cheese, chicken, cheese, rotel, green onions, and seasonings into a large bowl. Mix with a hand mixer until combined. 2. Spread onto each tortilla, giving about 1 inch of room around the outer edge. 3. Stick in the freezer for at least 30 minutes, and then slice in 1” sections. 4. Mix well. Refrigerate for least 4 hours or freeze for 30 min Form into bite sized balls. Roll in cheese. Bake, uncovered, at 400°F about 15 minutes, or until light brown.
