Ingredients:
For the pistachio paste:
400 gram peeled roasted Pistachios
For the crust:
1/3 cup (45g) Pistachios
160g Graham crackers/biscuits
6 tablespoons (90g) Malted butter
For the filling:
4 cups (900g) Cream cheese
1 cup (200g) Sugar
3/4 cup (180g) Pistachio paste
4 Eggs
1 teaspoon Vanilla extract
1/4 cup (60ml) Heavy cream
1/2 cup (115g) Sour cream
1½ tablespoons Cornstarch
For the topping:
3 tablespoons (45g) Pistachio paste
120g White chocolate
1/4 cup (60ml) Heavy cream
For decoration:
Finely ground pistachios

150g unsalted butter
95g icing sugar
30g ground almonds
1 egg
250 g of flour
Pistachio pastry cream
300g milk
75 g pistachio paste
3 Egg Yolks
45 g of sugar
30 g cornstarch
2 sheets of gelatin
30g Butter
Caramelized pistachio
60g shelled pistachio
45 icing sugar
5g butter
Decors
10g pistachio paste

Recipe flow
Sweet dough :
Mix the butter with the icing sugar and the almond powder.
Add an egg and continue beating Add the flour until a smooth paste is obtained. Film and keep cool until use.

The motive being of course, we got to eat it too!It’s very similar to a cake we like to call “nougatina”. In “nougatina” we use almonds. In this case we use pistachios, hence the name.
