186K views · 39K reactions | Strawberry Rose Tarts 🍓💌 Tart crust •1 2/3 cups all-purpose flour •1/2 cup icing sugar •Pinch of salt •1/2 cup unsalted butter - very cold •1 Egg - at room temperature Vanilla Pastry Cream •2 cups milk •1/2 tsp vanilla bean paste •1/4 cup cornstartch •1/3 cup sugar •2 large egg yolks Garnish •Fresh strawberries Method Tart crust: 1. Mix flour, icing sugar, and salt in a food processor. Add cold, cubed butter and pulse until fine crumbs form. 2. Add egg and pulse until dough forms. Shape into a ball, roll out between baking paper to 4 mm thick, and chill for at least an hour. 3. Prep tart mold by greasing outer sides with butter. Remove dough from the fridge. Use a cookie cutter to create 6 discs. 4.Line discs into the greased mold. Freeze mold for 1hr. 5.Preheat oven to 160°C. Bake for 20-30 minutes until golden. Cool completely. Vanilla Pastry Cream: 1. Whisk egg yolks and sugar in a bowl, then add cornstarch. 2. Heat milk and vanilla until simmering. Pour over yolk mixture while whisking, then return to pot. 3. Cook on low heat, whisking constantly, until thickened. Boil for 30 seconds, then remove from heat. 4. Transfer to a bowl, cover with plastic wrap and chill for about 2 hours. Assembling the Tart 1. Wash, hull, and halve the strawberries. 2. Spread pastry cream over the cooled tart crust. 3.Slice the strawberries paper-thin. 3.Transfer the slices to the tart, arranging them around the outside edge. Then, whisk in 1 egg and 3/4 cup of cold milk. - Mix in 2 & 1/2 cups of all purpose flour and 1/4 tsp of salt until a dough forms. Knead until smooth & transfer back to the mixing bowl. Cover and let chill in the fridge for 30 mins. - Then, make the butter block—place 2 sticks of butter between 2 pieces of parchment paper. Roll until you have a rectangle (about 8” x 5”) Place in the freezer until the dough is done chilling. - Roll out the chilled dough into a longer rectangle (about 13” x 5”) and place the butter block in the middle. Secure the dough around the butter block and roll out. - Fold the dough in thirds, and roll out again. Repeat this and then chill in the fridge for 30 minutes. Repeat this process once more and after it chills, roll it out into a long rectangle (about 1/4 cm thick) - Cut your dough into rectangles and roll into croissants. - Place on a baking sheet and bake on 370F on the top rack for 17-20 mins, or until golden brown. Punch down dough then Roll out dough in long rectangle shape. This next part I didn’t measure anything. I measure with my heart On rolled out dough Slather on thick layer of room temp butter (I used my hands lol), add tons of brown sugar and sprinkle cinnamon on top. Roll the dough up the long way so it’s one long roll. Cut 12 large rolls or 24 small rolls and set in 9x13 greased pan. (If doing 24 rolls you will need two 9x13’s) Cover and let rise 1 more hour. Pop in the oven at 350 til golden brown on top. About 25 minutes.
