I usually make a double match because a single only lasts for 24 hours in this house!! INGREDIENTS: ▫️1.5 cups Gluten free rolled oats ▫️1/2 cup unsweetened large flake coconut ▫️1/2 cup raw pumpkin seeds ▫️1/2 cup raw pecan halves ▫️1 tbsp coconut sugar ▫️pinch of salt (Wet Ingredients) ▫️3 tbsp coconut oil ▫️1/4 cup maple syrup ▫️1 tsp vanilla METHOD Combine your dry ingredients! Melt coconut oil and stir in remaining wet ingredients, combine your wet & dry mixtures. Spread evenly on a parchment lined baking tray. Bake at 315F for 10 mins. Turn oven down to 180F bake 10 more minutes, DO NOT STIR! Turn off oven and let cool in oven for 5-7 minutes more. Remove from oven, let cool fully and ENJOY! ❤️ I love this granola!! It’s my easy to-go Mom & Mini breakfast paired with coconut yogurt and fresh fruit! Now she is yours… please… thank me later Crack Granola Ingredients: • 2 cups slivered raw almonds • 1 1/4 cup raw pecans • 1 cup raw walnuts • 3 tbs chia seeds • 1 tbs flaxseed meal • 1.5 tsp ground cinnamon • 1/2 tsp salt • 1/3 cup coconut sugar • 3 tbs / 45ml coconut oil • 1/3 cup pure maple syrup or honey • 1/4 cup dried blueberries (optional // or other dried fruit) • 1/2 cup coconut flakes Instructions: 1. Preheat oven to 165°C. 2. In a large mixing bowl, combine the nuts, chia seeds, flaxseed meal, cinnamon, coconut sugar, and salt. 3. In a small saucepan, warm the coconut oil and maple syrup, pour over the dry ingredients and mix well. 4. Spread the mixture evenly onto a large baking sheet and bake for 20 minutes. Then remove from oven, add dried blueberries and coconut flakes and stir. 5. Increase heat to 170°C and return to the oven for another 5-8 minutes, or until deep golden brown. 6. The coconut oil will help this granola crisp up nicely, but be sure to watch it carefully as it browns quickly. 7. Once the granola is visibly browned and done cooking, remove from the oven and let cool completely. 8.
