Place parfait containers (5 ounces) at an angle in a muffin pan. 2. Quickly pour pudding into cups. Work fast so the pudding doesn’t set up before you have filled your cups. Refrigerate for 15 minutes. 3. In a stand mixer whip cream, sugar, and vanilla pudding mix whip until soft peaks form. 4. Add Oreos and whip until cookies are broken. Transfer to a piping bag and snip a large corner. Pipe at an angle over pudding. 5. Kudos bars were popular in the ‘90s & ‘00s, marketed as a healthy breakfast bar. However, they were loaded with chocolate, sugar, & weren’t all that healthy after all. This homemade version brings back memories of bagged lunches & on-the-go breakfasts that often included a Kudos bar. While these may not be a great breakfast option either, they’re at least packed w/ simple ingredients, some protein, & fiber. Perfect for a slightly healthier, sweet dessert. Kudos bars can no longer be found in stores today, so you’ll definitely want to BOOKMARK THIS RECIPE to help bring you back to Y2K! 4 c rice cereal (like Rice Krispies) 2 c old fashioned rolled oats 1 ¼ c light brown sugar ¾ c honey ¼ c peanut butter 6 tbsp coconut oil, plus 2 tsp extra for the chocolate 2 tsp vanilla extract Pinch of kosher salt 2 c semi sweet chocolate chips ½ c mini m&ms 1. Line a 9x13 pan & a baking sheet w/ parchment paper. 2. In a large mixing bowl, combine rice cereal & old fashioned oats. Set aside. 3. Place a skillet over medium heat. Add brown sugar, honey, peanut butter, ¾ c coconut oil, vanilla, and salt. Whisk to combine. 4. Bring to a simmer, then lower the heat. Simmer for 4-5 min, or until it becomes a thick sauce. 5. Pour sauce over the rice cereal & oats. Stir w/ a rubber spatula to coat evenly. 6. Scoop mixture into the prepared 9x13 pan & press down into a flat, even layer. 7. Place in fridge for about 1 hr, or until the bars have cooled & solidified. 8. After they’ve set, remove from the pan & cut into individual rectangular granola bars (about 24). 9. Add chocolate chips & 2 tsp coconut oil to a microwave safe bowl. Microwave in 30 sec intervals, stirring in between, until melted & smooth. 10. Dip bottoms of the bars in the chocolate, then place them on the prepared baking sheet, chocolate side down. 11. Scoop remaining chocolate into a zip top bag & cut off a small piece of the corner. Place m&ms on top of each bar. Use the bag to drizzle chocolate over top to secure the m&ms in place. 12.
