395K views · 16K reactions | GREEK SALAD PASTA SALAD Serves 4 395kcal per portion and 15g protein 150g dry weight pasta 100g feta cheese 1 large cupped handful kalamata olives, cut in 1/2 Large handful of cherry tomatoes, cut in 1/2 1 red pepper 1 green pepper 1/2 red onion, thinly sliced 1 tin chickpeas Dressing: 2 tbsp red wine vinegar, 1 tsp Dijon mustard, 1 tsp honey, 2 tsp olive oil, salt and pepper. 1. Diced the red pepper and mix with the drained chickpeas. Toss with 1 tsp garlic powder, 1 tsp oregano and a drizzle of olive oil. Season with salt and pepper and tip onto a baking tray. Roast at 210c fan for 30 minutes until golden. 2. Precook the pasta in boiling salted water, drain and rinse under cold water. Leave to one side. 3. Mix the dressing by combining the red wine vinegar, mustard, olive oil and honey. Season with salt and pepper. 4. Mix the pasta with the finely diced green pepper, tomatoes, olives, onion and roasted chickpeas & red pepper. Combine with the dressing and add an extra pinch of oregano. 5.
