For this recipe, you're going to use as much garlic as you want or as much as your heartburn can handle. But it is called garlic noodles for a reason. I love biting into big chunks of garlic so I keep it chunky. We're also going to need some Parmesan cheese. I know it sounds weird but trust me, you need it. We're going to make the sauce with oyster sauce. We're going to need fish sauce, brown sugar, chicken bouillon, black pepper, and a little soy sauce. The flavor profile is a little sweet and a lot of savory. Now, let's go make it. I like using wheat noodles for this dish but if you can't find them, you can use spaghetti noodles which I do all the time. Blanch them until they're al dente. Heat your wok a little oil and some butter. The oil is in here to make sure the butter doesn't burn. Once the butter's melted, add in all the garlic and saute until the garlic has softened. After about two to 3 minutes, pour in the sauce. Once the sauce starts to bubble up, add in the noodles. Give it a good toss. I actually like using chopsticks to toss the noodles so it doesn't break up. You don't have to do this but I like adding a little of the pasta water. Lastly, sprinkle all the Parmesan cheese. One last toss and it's done. I have no patience so let's eat it here. To serve, you can garnish some green onions on top.
