No-Bake Healthy Energy Bites
INGREDIENTS 2 cups oats (I use instant oats but any should do) 4 cups lightly-processed pumpkin and flax granola Note granola will measure 3 cups after processing (I use Nature's Path Organic Pumpkin Flax Granola.) 2 cups semi-sweet mini morsels You can use regular-sized chocolate chips—I prefer the mini. To make this even better you could chop up Lindt swiss chocolate into small pieces. To make it healthier use dark chocolate 1 cup honey (use ¾ cup if you use peanut butter with sugar added) 2 cups peanut butter (creamy or chunky based on your preference—I use creamy). Note- I use no sugar added peanut butter. However, if you use Skippy or Jiffy etc. (with sugar added) eliminate ¼ C honey— unless you like very sweet things. 2 teaspoons vanilla
