Roasting the shrimp instead of sautéing it cuts down on the time needed to make it and produces an absolutely delicious dish. . . Roasted Shrimp Scampi . . 2 lb shrimp, peeled and deveined (These shrimp are U-15, but I’ve often used smaller sized with great results) 1/4 cup olive oil 4 tbls melted butter 5 cloves chopped garlic 1 tsp chili flakes 1/3 cup white wine (I used Chardonnay because that’s what I tend to have in the House) 1 tsp salt 1/2 tsp pepper Juice and zest of one large lemon 1/2 cup chopped parsley 1/4 cup chopped basil 1/2 cup grated Parmesan Preheat oven to 400F. It’s a great entertaining dish because it can be completely set up in advance and parked in the fridge until you are ready to bake it off . . .
