Makes 3 4oz ramekins. There are 40g of protein in the whole batch, approx 13 grams per ramekin! I doubled the batch for meal prep, so I would have 1 ramekin to eat with my breakfast or as a mid morning snack or dessert each day! 1 cup cottage cheese 1/4 cup nonfat plain greek yogurt 2 tablespoons maple syrup 1 large egg 1 tbsp lemon zest Blueberries Blend yogurt, cottage cheese, egg, maple syrup and lemon zest until smooth. Divide evenly between ramekins, then add a few blueberries to each. Bake at 350F for 20-25 mins or until the center is just set. Remove and chill in the fridge until cooled.
