4 boneless skinless chicken breasts, thinly sliced or pounded 
3 eggs, beaten
1 teaspoon dijon mustard
1 teaspoon kosher salt
½ teaspoon ground black pepper
2 cups matzo meal
4 tablespoons sesame seeds
Grapeseed oil or any neutral oil for frying 
Flakey sea salt

-3  large chicken cutlets
-All-purpose seasoning of choice
-8 basil leaves
-Mozzarella cheese (sliced)

Preparation:

12 oz pasta of your choosing 
2 chicken breasts sliced into cutlets 
5 garlic cloves minced 
1 shallot minced 
4 basil leaves thinly sliced 
4 Tbsp butter 
1-2 Tbsp olive oil (to coat the pan)

1/3 C Parmesan

Directions 
Boil a pot of salted water. 
Mix breadcrumbs, Parmesan and seasonings. 
Dip the cutlets in flour, egg and then bread crumbs 

In a shallow pan heat up oil and fry cutlets until cooked through and golden brown 

Assemble the sauce

Crispy Chicken Cutlets

2 boneless, skinless chicken breasts, halved horizontally to make 4 pieces
3/4 cup panko breadcrumbs
1 1/2 tsp Diamond Crystal salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
2 tsp za’taar
1/4 tsp chili flakes
1/4 tsp chili powder
avocado oil for frying

Slice the chicken breasts in half. Use a meat mallet or rolling pin to pound the chicken breasts to ½ inch thickness. Season each piece of chicken well with salt and pepper and set aside.
In a shallow bowl mix together the breadcrumbs, salt, pepper, garlic powder, onion powder, za’taar, chili flakes and chili powder. In another bowl whisk the egg.
