Murf’s Copycat Potato Salad
· 1 serving · 1 serving • 10-12 oz small red potatoes * • 2-3 green onion finely chopped • 2 Tbsp celery seed • 1 tsp salt • 4-6 hard boiled eggs (Grated) Dressing • 2 eggs beaten • 1/4c white sugar • 3 tsp cornstarch • 1 tsp salt • 1/2 c white vinegar • 1-15oz can evaporated milk • 1 tsp yellow mustard • 1/4c butter • 1c Mayo (I cut this down to 1/3 C) Cook potatoes. Drain. Cool In large bowl toss potatoes with onion, celery seed, 1 tsp salt and hard boiled eggs. In medium saucepan whisk 2 eggs, sugar, cornstarch, salt. Stir in vinegar, milk, mustard. Stir frequently over low heat until thick (10 min). Remove from heat, stir in butter. Refrigerate until cool (30 min). Stir in Mayo Gently toss dressing into potato mix.
