Chilli beef folded in a wrap with crispy tortilla chips, melted cheese, a chive sauce and then brushed with garlic butter for an absolute banging quick and easy dinner 🤤 Ingredients (serves 2): 2 flour tortilla wraps 50g grated mozzarella 2 ladles of leftover chilli (I pasted my chilli recipe 19th June!) https://www.facebook.com/reel/409834932057085?locale=en_GB 20g tortilla chips - I used chilli heatwave 5g light butter Tsp chopped garlic A sprig of parsley chopped Chive sauce (could sub with sour cream and chive shop brought) 60g fat free greek yoghurt ¼ tsp garlic granules ¼ tsp onion granules Tsp dried chive Tsp distilled vinegar 💗Start by making up the chive sauce and set to one side. 💗Next, slice the wrap half way down the center. In one quadrant, add the cheese, then the chilli beef, the tortilla chips, followed by the chive sauce. 💗Fold carefully before transferring to a pan. Keep on one side for a minute and half before flipping for a further minute and half. 💗Whilst the wrap cooks, in a bowl melt the butter and chopped garlic in a microwave. Stir to combine and add the chopped parsley. 💗Serve brushing over the garlic butter with any leftover chive sauce. You’ll need: 2 butternut squash Olive oil Kosher salt Pepper Garlic powder For the Dressing 1/4 cup tahini 2 tbsp apple cider vinegar 1/2 lemon, squeezed 1 shallot, finely minced 2 tbsp honey 2 tbsp water (plus more if needed to thin the dressing to a pourable consistency) 1/2-3/4 tsp kosher salt For the Walnuts 1/2 cup raw walnuts, toasted and chopped* fresh parsley for garnish 1. Preheat oven to 425 degrees and line a baking sheet with parchment paper. 2. Slice butternut squash in half length wise and scoop out the seeds. 3. Drizzle with olive oil and season with salt, pepper, and garlic powder. 4. Turn the halves of squash cut side down and roast 30-40 minutes, depending on size of squash, until fork tender. 5. While roasting, prepare the tahini dressing. Combine tahini, vinegar, lemon juice, shallot, honey, water, and salt and whisk to combine. 6. Remove squash from oven and transfer to a plate. Drizzle with tahini dressing and top with roasted chopped walnuts and chopped parsley *we used baby butternut squash, but this recipe can be made with regular as well. Roasting time may be closer to 40 minutes depending on the size of the squash. *to toast the walnuts - place on a dry sheet tray and toast in a 350 degree oven for 5-7 minutes. By @Plantyou Ingredients 2 blocks extra firm tofu, pressed for 20 minutes 12 cloves, or more to taste MARINADE ¼ cup soy sauce, tamari if gluten-free 1 tbsp dijon mustard 2 tbsp maple syrup 1 tbsp apple cider vinegar 1 tsp paprika 3 cloves garlic, minced 1 orange , zest only GLAZE ¼ cup maple syrup 4 tbsp water 1 tbsp molasses 2 tbsp dijon mustard 1 tsp cinnamon 1 tbsp balsamic glaze 1 orange, same one you zested, juiced Instructions First, press the tofu, either using a tofu presser, or by wrapping in a clean cloth and topping with something heavy, like a stack of books. Allow the excess liquid to press out for around 20 minutes. Once pressed, slice the tofu blocks in half length wise. Carefully score the top in a cross stitch pattern. In a Tupperware container or reusable bag, combine the marinade ingredients. Transfer the tofu to the container and using a bbq brush, cover with the marinade. Allow to set for at least an hour, up to overnight in the fridge. Preheat the oven to 375F. Remove the tofu from the marinade, reserving excess for a salad dressing if desired. Transfer to a parchment lined baking sheet, and add the cloves into the cross stitch connecting points, and bake for 20 minutes, until browned slightly. While the tofu bakes, prepare the glaze. Combine the listed glaze ingredients in a small saucepan. Bring to a simmer, until thickened slightly. Remove the tofu hams from the oven, and using a bbq brush, liberally cover the “hams” with the glaze. Place back in the oven for 15 to 20 minutes, until caramelized on the outside. BEEF HANDPIE / PASTY RECIPE: Makes 12 INGREDIENTS Filling: 2 lbs ground beef 5 medium potatoes, diced small 1 tbsp minced garlic 1 large white onion, diced 2 cups beef stock 1/4 cup flour 1 tbsp tomato paste 1 tbsp mustard 2 tbsp Worcestershire sauce Pinch of dried parsley, thyme and oregano Salt and pepper 8 oz cheddar cheese, shredded Crust 3 and 1/4 cups flour 1 and 1/2 tsp salt 1 cup cold butter 3/4 cup cold water 1 egg, beaten - (to brush on top) INSTRUCTIONS -Cook ground beef in a large cast tron skillet, remove from the pan and drain most of the fat. -In the same pan, cook the onion, garlic, and diced potatoes. Add about half the beef stock, cover and cook until potatoes are fork tender. -With heat on low, add the ground beef back in and sprinkle everything with a dusting of flour, stir. Pour in the rest of the beef stock and allow it to thicken up. Add the tomato paste, mustard, worcestershtre sauce, herbs and salt/ pepper to taste. -While the filling is cooling down, make the crust. First, mix flour and salt in a medium bowl. Cut in the butter until mixture forms coarse crumbs. Add the water a little at a time until all flour is moistened and a dough is forming. Knead until thoroughly mixed. -Split the dough into 6 even sections. Taking each section in turn, roll it into a ball and then flatten into a very thin circle (about the thickness of a coin) with a rolling pin, then take a knife and slice each circle in half down the center. Repeat with all sections. (You could instead simply make 12 balls and roll into 12 circles, but this takes twice as long) -Prepare your hand pies by using a 1/2 cup to scoop a portion of the filling into the crust; then top with some shredded cheddar and fold and crimp edges. Pinch and crimp the sides shut all around.
