SPINACH AND FETA PASTRIES 1 x sheet puff pastry Filling: 120g frozen spinach 1 x small onion (half large) 3 x garlic cloves Mixed herbs, salt & pepper 1/2 x cup water 200g feta cheese crumbled 50g grated mozzarella 1 x egg separated (white will mix into filling, yolk to brush the pastry) Sesame seeds Pre heat oven to 180C Making filling: Fry onion and garlic for a few minutes till tender. add in soinach. herbs. salt and pepper and the water and fry until the water has evaporated. Cool down, for quickest cooling spread on a large plate and put in the freezer, should take 5 min this way. Once cooled add in the cheese and egg white and mix well.
