Greek Lemon Chicken with Roasted Vegetables 🍋🍗🥦 Ingredients: 4 chicken breasts 1 lemon, juiced and zest 2 cloves garlic, minced 2 tablespoons olive oil 1 teaspoon dried oregano Salt and pepper to taste Assorted vegetables ( bell peppers, zucchini, cherry tomatoes) Instructions: Preheat oven to 400°F (200°C). Place chicken breasts in a baking dish. In a small bowl, whisk together lemon juice, lemon zest, minced garlic, olive oil, dried oregano, salt, and pepper. Pour the marinade over the chicken breasts, turning to coat evenly. Arrange the assorted vegetables around the chicken in the baking dish.
