Sauté mushrooms in butter until tender. Season chicken breasts with garlic powder, Italian seasoning, salt, and pepper. Cut a pocket in each chicken breast and stuff with mushrooms and mozzarella. Heat olive oil in a skillet and sear chicken until golden on both sides. Transfer to the oven and bake for 15-20 minutes. Garnish with fresh parsley before serving.
