¾ cup uncooked orzo
16-20 peeled and deveined shrimp (fresh or frozen)
1¼ cup chopped tomatoes
1¼ cup chopped cucumber
1 cup diced green onion
1 tbsp olive oil
1 15 oz can chickpeas
2 tbsp fresh dill
½ cup feta cheese
add all ingredients to a bowl and top with diced green onion, fresh dill, Lemon vinaigrette and feta cheese
