Making homemade noodles is so easy and so much better than store bought. The good news is you can make this ahead of time, dry them in bundles and use them anytime for soup, for stroganoff, for asian noodle dishes or simple cooked with a little butter and herbs on top. I like to use my Kitchenaid mixer attachment to cut the noodles, but you don't need any special tools if you don't have them.
