So that we can write the "latest" tag link in the Readme instead of manually changing for every version.

This way we will have 2 tags. One will point to the actual release (vX.X.X), and one will point to the same commit of that release but will change when a new one is created.

This is mostly to remove a couple of steps from the release routine.
