I love good ‘ol cheesy loaded traditional nachos just as much as the next person (trust me, ask my husband 😂), but I can’t be eating those every day! So when the nacho craving hits and I want something a little healthier, I make these. They truly are SO GOOD. Instead of tortilla chips, you use bell peppers. I used mini bell peppers because they’re the perfect size, but you can use regular bell peppers, too. Just make sure you cut them wide enough to hold all the toppings.
