Artichoke With Creamy Balsamic Dipping Sauce
45min · 1 serving Ingredients • 2 Whole Artichokes • 4-5 garlic cloves • 1 lemon • 1/2-3/4 cup of Vegan Mayo • 1/2-1 tbsp of Balsamic Vinegar • Freshly ground black pepper Directions • Cut the top tip off your artichokes • Trim sharp stems with kitchen scissors • Cut the stem, leaving 1/2-1 inch left • Peal any lingering stem leaves off the stem • Bring a large pot full with 2-3 inches of water to a boil • Place your trimmed artichokes in water, stem side down • Add in your garlic cloves and juice of lemon to the pot • Bring water to boil again than turn down heat • Cover and cook for 30-45 minutes until stems are easily removed • Remove from pot and drain • In a small bowl add your vegan mayo and balsamic vinegar • Whisk together and season with pepper • Serve cook
