Ingredients: For the Crust: 1½ cups all-purpose flour ½ cup powdered sugar ½ cup unsalted butter, softened For the Lemon Filling: 1 cup granulated sugar 2 tbsp all-purpose flour ½ tsp baking powder 3 large eggs ½ cup fresh lemon juice (about 2–3 lemons) 1 tbsp lemon zest For the Meringue: 3 large egg whites ¼ tsp cream of tartar ⅓ cup granulated sugar Instructions: Preheat oven to 350°F (175°C). Line a 9x9-inch pan with parchment paper. For crust, mix flour, powdered sugar, and butter until crumbly; bake for 15 minutes. For filling, whisk sugar, flour, and baking powder. Blend in eggs, lemon juice, and zest. Bake filling for 15–18 minutes. Beat egg whites and cream of tartar until soft peaks form, adding sugar gradually. Spread meringue atop lemon layer.
