Even though there were chillis, it’s hidden from the taste of the fish sauce and brown sugar. Give this one a go and let me know what you think :) Ingredients - 1/2 cup fish sauce (ve) - 1 shallot, chopped - 4-5 garlic cloves - 2-3 Thai chilli - Handful of coriander - 1 lime juice - 1 tbsp brown sugar - 1 tsp Salt - (optional) 1 tsp MSG & NO IT’S NOT BAD FOR YOU!!! First, we're going to start off with some scallions, and we're just going to give them a fine mince. Next up, we have jalapenos. If you want it a little bit spicier, you can opt in to include the seeds. I'm going to give this a tiny dice. We have 2 and 1/2 cups of some grapeseed oil. And we're going to have that on medium high. Next up, we have ginger, and we're going to cut this about the same size as the jalapeno. I'm going to take these whole green Szechuan peppers and add that to the mortar and pestle and just grind it a little coarse. This is probably as coarse you would like it. Next up, we have our chile de arbols. You just kind of blitz them a little bit so they're a little bit more coarse. Now we're ready to assemble the chili oil. So first up, we have some gochugaru chilies. This is Korean chili flake. We have some chile de arbol, red Szechuan peppercorns, green Szechuan peppercorns, sesame seeds, scallions, jalapenos, and ginger. And we're going to grate in some fresh garlic. We're not going to forget about our seasonings. We have salt and sugar as well that we're going to add. We're going to mix this a little bit. So as you can see, the oil is smoking hot. I'm just going to utilize a ladle. And you can definitely smell the chilies. And this smoking-hot oil is also going to cook those fresh ingredients. And that's it. That's chili oil. Give it a taste. Oh my god. That is literally perfect.
