Nanxiang (Shanghai)-style "soup dumplings" or xiao long bao are round, purse-shaped dumplings made of a thicker wheat wrapper, filled with a variety of fillings such as pork, seafood, or vegetables along with a gelatin-gelled aspic. Heat from steaming then melts this into soup. These "baos" are traditionally prepared in a "xiaolong" a small bamboo steam basket.
