I'm going to bring in a large bowl and we're going to add all of our biscuit pieces right in there. This is going to be such an easy and delicious lunch dinner if you like Mexican inspired dinners. This is going to be for you. Oh my goodness, it's going to be so delicious, you guys. Alright. Beautiful. Alright, I added four more biscuits to our bowl. Now, I'm going to come in with my pound of cooked ground beef and we're going to add that whole pound of ground beef into our cut up biscuits and if you don't want ground beef, you could do a shredded chicken, you could do a carnitas, you could do whatever meat you prefer. I'm instantly going to bring in my red enchilada sauce. You guys know I love enchilada sauce. Now, you can make a homemade enchilada sauce if that's what you prefer. You could do a homemade biscuit but I'm keeping it easy and simple so anyone could recreate this. I'm going to use half of this can of enchilada sauce. I might add more later but for now I think that's enough. I have some diced green chilies that we're going to put in there. I'm going to use this whole can. It's one of those bigger cans. Let's look at those ounces. 7 ounces. Perfect. Now to season this up I didn't season my ground beef. I forgot to so I'm just going to add the seasoning now. And we're just going to do a little bit of taco seasoning in there. Oh my goodness. It's going to be so good you guys. All my favourite things in one bowl. Now you guys know the only thing that's missing is some cheese. I'm going to add half of this bag of cheese. This is the Mexican Cheddar Jack, my preferred Mexican shredded cheese. Alright, I'm going to come in with my food-grade gloves and we are just going to toss this all together. Get those biscuits covered in the enchilada sauce. Get that meat well blended with all of our other ingredients, our green chilies, our cheese, our taco seasoning. We just want everything to be perfectly combined. If you don't, you know, some gloves. You could just grab like some salad tossers but I think this is going to be just right. It smells delicious. Oh my goodness. Okay, I think that's perfectly mixed. Alright, we're going to put this to the side as we bring in our muffin tin and this is a silicone muffins tin so you don't need to grease it. I'm going to grab some Tom's and we're going to fill up our muffin tin with our delicious biscuit enchilada sauce mixture. We're going to make like Mexican muffins but you know, for dinner lunch. Oh my goodness. This is going to be so delicious you guys. I absolutely love this recipe. And if you don't want to do the muffins you can put it in a thirteen by nine and just bake it as a casserole. But I think that these little muffins are just going to be so perfect. And great for food prep. You can put them in the freezer if you don't eat them all right away. But this is going to be incredible. So let's just go ahead and get our mixture all in our cupcake pan. Alright these are ready for the oven. I have my oven set to 375 and they're going to cook for about 30 to 35 minutes. Oh My, these looks so good. They're little pull-apart Mexican muffins. Ugh. Alright, let's go ahead and grab one. I think I'm going to go for this smaller guy and look at that. Whoa. It looks so good. It held together perfectly. Mmm and it smells incredible. Looks juicy. Mm mm. That is really good. Oh my goodness. Mm. You gotta try it.
