This time, I made Big Mac Egg Rolls and they were fabulous. My 16 yr old came home from softball practice and had some (reheated in the air fryer) and said they were the best thing I’ve ever made. Lol RECIPE - Makes 12 egg rolls INGREDIENTS: 6 Cutdacarb flatbreads 1 lb lean ground beef 1 Tbsp Worcestershire sauce 1 tsp onion powder Dash of salt Dash of black pepper 6 slices of cheddar cheese, halved Diced pickles (I used 3 whole baby dill pickles) 1 small diced onion Cooking spray STEPS: 1. I’m not sure if it’s because I love a good cranberry orange flavor combo or because I switched up the scone icing recipe! These puppies will be making another appearance on Christmas morning! Scones: 1/2 cup pumpkin purée (you won’t taste pumpkin!) 1/2 cup Swerve granular sugar 1/4 tsp orange extract (1/8 tsp for less orange flavor) 1 egg 1 1/2 cup all purpose flour 1/2 tsp baking soda 1/2 tsp salt 1 cup fresh cranberries Icing: 2 tbsp fat free evaporated milk 1/2 tsp vanilla sugar free pudding mix 1/2 cup Swerve confectioners sugar Instructions: Add pumpkin puree, sugar, orange extract, and egg into a medium bowl. Scones: 1.5 bananas 1/3 cup Swerve granular sugar 1/2 tsp vanilla 1 egg 1 3/4 cup all purpose flour 1/2 tsp baking soda 1/2 tsp salt 3/4 cup blueberries (fresh or frozen) Icing: 50g light n fit zero sugar vanilla yogurt 60-70g Swerve confectioners sugar Instructions: Add bananas, sugar, vanilla, and egg into a medium bowl. Whisk until well combined. Add flour, baking soda and salt. Stir only a few times - do not over stir. Add the blueberries and stir until just mixed together. Dump into a 9 inch spring form pan lined with parchment. Freeze for 1-2 hours. Remove from freezer, and cut the dough

INGREDIENTS 1 lb of ground beef 1 chopped onion 1/2 tsp salt and pepper 2 tsp chili powder 1 tsp each cumin and dried cilantro 1/4 tsp cayenne 1 TBSP minced garlic Small Fajita size flour tortillas 1 can refried beans Taco Sauce 2 cups of shredded cheese Diced tomatoes Chopped green onions Vegetable oil INSTRUCTIONS Brown ground beef in a large skillet over medium high heat. Add a chopped onion. Once beef is fully cooked drain any extra grease. Season with salt, pepper, chili powder, cumin, dried cilantro, and cayenne. Add minced garlic and stir. While the beef is cooking lightly fry flour tortillas in a separate skillet. Add just enough vegetable oil to cover the bottom of the skillet. Fry tortillas

Preheat the oven to 450F. 1 lb salmon filet, cut into bite size chunks (I removed the skin) 1 tbls olive oil 2 tbls Cajun seasoning Juice of one lime Combine all in a bowl and toss to combine. Let marinate for 10 minutes Roast 10-15 minutes or until the salmon is cooked to your liking. Sprinkle with lime juice when they come out of oven **Or you can air fry at 400 for 8-10 minutes.
