This time we're making Cowboy Candy! This recipe is as simple as it gets and... | By Hoss | Hey, welcome to the kitchen. Today, I have an abundance of jalapeno peppers and I'm going to make some pineapple cowboy candy. Now, you can use any peppers for this. Traditionally, jalapenos are used. I'm going to use some jalapenos and some banana pepper because I just have plenty in the kitchen that I need to process. Now, I do take the seeds out of the bananas and out of part of the jalapenos because Hoss just does not like really hot spicy stuff. But that's just a personal preference. You can leave all the seeds in if you like. Gonna give them a quick wash here and let the water drain out. And ooh this can take your breath away. You want to cut them into about one fourth inch slices You don't have to be real precise here. Had to go and get my other knife. That one was kind of dull. This is a quick and easy recipe to utilize all those extra peppers that you have. So you want to start with some apple cider vinegar. You can use the clear distilled white vinegar. But I just prefer the taste of apple cider vinegar. One and 1half cups here. And then I'm going to add two cups of sugar to this. And just a plain white granulated sugar. And then for the spices I use celery seed. Um and it calls for mustard seed. I didn't have any mustard seed. So I just used the ground mustard and it worked out fine. And also most recipes don't call for this but I like to throw in some allspice or pickling spice I think is what it's actually called. And I put a teaspoon here but actually I just threw in a little bit of this. So you want to mix this up well and bring it to a bowl and then I'm going to turn it down and just let it simmer while I prepare my jars. First I'm going to put about a teaspoon of drained crushed pineapple. You can use pineapple chunks also. But you just want to make sure you drain it really well. Then layer your peppers in there. And press them down because they will shrink up some. So it may you may think that you're overfilling the jar but you want to get as many peppers in there as possible. Now I'm using this these small jelly jars because they're the perfect size for one serving and they make excellent gifts. Here I'm covering the peppers with the brine solution. And the heat does melt a little bit as the peppers in the brine ages. And these peppers are going to shrink a little bit. Next I'm just going to debubble. Get all the bubbles out and make sure all the peppers are covered in the brine solution. After I clean my rims, make sure there's not any of the sticky bride on there. I place my lids on and my rings on finger tight. Don't tighten them too tight. And then you want to do a water bath. I'm using my electric pressure kenner here. You can also use it to water bath and you want to water bath these for 10 minutes. Now for best results, you want to let these age for at least 14 days preferably up to 28 for the best flavors to develop. After you open it, you want to be sure to refrigerate it and don't throw away that brine. It is excellent as a marinade on chicken. There's some pineapple down in there too. Is that hot? No, that's good. That's good.
