Eli Saiach on Instagram: "In case you need something buttery, flaky, and bursting with blueberries…these scones are here to save the day! 🫐✨ Ingredients -2 cups all-purpose flour -1/2 tsp salt -4 tsp baking powder -4 tbsp sugar, plus more for sprinkling -8 tbsp unsalted cold butter, cubed -Zest 1 lemon -1 1/2 cup blueberries -1 egg, slightly beaten -1/2 cup milk -2 tbsp heavy cream (optional) Instructions 1.Preheat the oven to 400°F. In a large bowl, whisk together flour, salt, baking powder, and sugar. Rub in the butter with your fingers until the mixture resembles coarse crumbs. Stir in the lemon zest and blueberries. 2.Make a well in the center of the flour mixture; add the beaten egg and milk. Gently mix until just combined to form the dough. Be careful not to overwork the dough.
