2 red snapper fillets 1 T olive oil Salt and pepper to taste 1/2 c diced tomatoes 1/2 c diced bell peppers (red or green) 1/4 c diced onions 2 cloves garlic, minced 1 cup heavy cream 1 tbsp Creole seasoning 1/2 c chicken broth 1 T chopped parsley for garnish Season the red snapper fillets with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Sear the red snapper fillets for about 3-4 minutes on each side, until they are golden brown and cooked through. Remove from the skillet and set aside. In the same skillet, add a little more olive oil if needed. Sauté the diced onions, bell peppers, and garlic until they are softened and fragrant.
