They're made from breadcrumbs and leeks and cheese, lots of herbs and a little kick of mustard. They were wonderful. We would have them for dinner with mash and baked beans, or if we were lucky, we'd find them the next day in our lunch box. We would even have what we called Glamorgan scotch eggs - swapping the sausagemeat for this veggie version. I can still remember eating it on the beach. This is my all in one baked version. It's quicker and less fiddly and you don't have to stand over a pan for ages - just throw it in the oven I have written up the recipe for this below and I would love to know if you're going to give it a try! Feeds 4-6 40g butter 250g finely sliced leeks 450g fresh white breadcrumbs 200g grated mature cheddar (plus extra for the topping) 1 tbsp of finely chopped fresh herbs (I used Thyme and Rosemary) Salt and ground black pepper 2 eggs beaten 280ml milk 1.5 tsp dijon mustard Heat the butter in a non-stick frying pan. Add the leeks and fry for 5 minutes, stirring regularly until soft Place the breadcrumbs in a mixing bowl. Add the fried leeks, grated cheese, fresh herbs and season with salt and pepper. Heat the oven to 180C (Fan) Mix the eggs, milk and mustard together and pour them over the breadcrumbs. Mix thoroughly until the breadcrumbs have absorbed all the liquid. Tip the mixture into a lined baking dish approximately 25cm across and 2-3cm deep. Press the mixture down with the back of a spoon, including up to the edges. Sprinkle cheese over the top. Bake in the oven for around 30 minutes or until the cheese is melted and golden brown. Leave the bake to cool for a little to firm up, before lifting it out of the baking dish and cutting it into wedges. #baking #vegetarian #dinnerideas #nostalgia #foodmemories #familyfood #dinnerideas #budgetcooking #moneysaving #delicious #goodfood #dinnerinspo #flavour #homemade #recipes #comfortfood | Amy Sheppard | Facebook

Yeah, do you want to try it? These are his favorite. There you go. I'm going to add in some butter into some warm milk. The milk will melt the butter. Then, I'm going to add in some sugar. Give it a good mix to melt the butter and then leave it to cool. To some warm water, I'm going to add in active dry yeast. Give it a little stir and it should get a little foamy. I'm going to use a stand mixer and a dough hook for this but if you don't have one, you can always use hands. It just gets a little messy. To the mixing bowl, we're going to add in the butter and milk mixture, some eggs, one two, three. Salt, the yeast mixture and flour. I'm going to set the bowl on the stand mixer and then slowly start to mix. Make sure to scrape the sides so everything is fully combined. We're going to slowly add in the rest of the flour. Baking is a process and that's why I don't do it that often. Let me show you what it's going to start to look like. Once it becomes nice and smooth like this, we're going to take it out and knead it by hand. Flour a clean surface and dump all of the dough. It's going to get a little messy here but let's knead the dough. Don't be afraid to add a little more flour if it gets too sticky. I use a scraper to help me get the really sticky parts out. Now form it into a big bowl. I'm going to oil up the mixing bowl and then place the dough in the mixing bowl. I'm going to cover it up for at least an hour to let it rise. Before after. It's been an hour now so we're going to uncover it. Now we're going to punch it. Put it on a clean floured surface. Then I'm going to divide it up into equal pieces. Just tuck and roll the ends to form a nice round ball. Like this. Place it all on a baking sheet and then cover and let it rest and rise another 30 minutes. They've been resting and now we're going to uncover it and put it in the oven. While we wait, let's melt some butter to make the garlic butter. I like grating fresh garlic into this because it gives a really nice punch. I'm going to add some parsley, give it a good stir, and now we wait. Once they look like this, take them out the oven. And while they're nice and hot, brush on some garlic butter. I promise you if you make these Parker House rolls, they'll be gone in seconds. Final touch is to sprinkle some flaky sea salt on top.
