Ingredients For the risotto: 2 cups Arborio rice 6 cups chicken/vegetable broth 1/2 cup white wine 1 onion, diced 3 tbsp butter 1/2 cup grated Parmesan Salt and pepper For stuffing and coating: 8 oz mozzarella, cubed 2 cups breadcrumbs 1 cup flour 3 eggs, beaten Oil for frying Marinara sauce, parsley for serving Instructions Make the Risotto: Sauté onion in butter; add rice and toast for 2 minutes. Stir in wine and cook until absorbed. Gradually add broth, stirring until creamy (20 mins). Mix in Parmesan; cool completely. Form Arancini: Shape risotto into balls with a mozzarella cube inside. Coat: Roll balls in flour, then egg, then breadcrumbs. Fry: Heat oil to 350°F (175°C). Fry until golden (3-4 mins). Drain. Serve: Serve with marinara sauce, garnished with parsley.
