You can add goraka or tamarind to yours but I didn't have any on hand today. The main component is the ground roasted rice and coconut. Don't skip getting this part right. It makes the dish! RECIPE 1 cup desiccated coconut (fresh or dried) 1/2 cup uncooked rice 2 tbsp coconut oil 8 curry leaves 3 cloves garlic, sliced 1 tsp brown mustard seeds 400g pork belly, sliced into 2cm pieces 1 tbsp sea salt 1 tbsp black pepper 1 tbsp finely grated ginger 1 tsp chilli flakes 1 tbsp roasted curry powder (see previous reel) 1 brown onion, sliced 1 pandan leaf 1 lemongrass stalk, bruised 2 tbsp white vinegar Fresh lime wedges, to serve Cooked Basmati rice, to serve 1. Add coconut to a medium frying pan over medium heat. Cook, tossing for 5-10 minutes, until dark browned all over. Grind until fine and a little clumpy from the coconut releasing its oils. 2. Meanwhile, place another small frying pan over medium heat with the rice. Cook, tossing, for 5-10 minutes, until dark brown. Grind until almost fine. 3. Clean out the medium frying pan and place back over medium heat with the coconut oil. Add the curry leaves and garlic. Cook, tossing, until fragrant. Add the mustard seeds and cook until they pop. 4. Add the pork belly pieces, salt, black pepper, ginger, chilli, roasted curry powder, onion and pandan leaf and cook, tossing for 2 minutes. 6. Add the lemongrass and vinegar, then cover with water until everything is about 80% covered. Allow to simmer on low-medium heat until the pork is tender, about 30 minutes. 7. Add the blackened rice and blackened coconut and stir through until the moisture has been soaked up by the coconut and rice, leaving a curry on the more dry side. 8.
